Ingredients
- 200 gr. spinach
- 200 gr. mozzarella (grated)
- 200 gr. artichokes
- 150 gr. cream cheese
- 100 gr. Parmesan (grated)
- 4 peppers – cut in half and in different colors
- Olive oil
- Salt and pepper
- 2 tablespoons mayo
- Parsley (nicely chopped)
Preparation
Preheat the oven at 180 C – while you wait, you can start preparing the dish. Clean the peppers well and cut them in half, then put them in a tray and sprinkle some salt, pepper and olive oil on them. Now, mix the ingredients except for the parsley and half of the cheese in a bowl with some salt and pepper, then fill the peppers with it. Cover them with the remaining cheese and parsley, bake in the oven for a max of 30 minutes, then add a bit more parsley when serving.
